Mix the cheese and the breadcrumbs together. Put on a plate. Put the seasoned flour on a separate plate.

Flatten the turkey slightly (with a mallet) and then put one in the flour. Pat off the excess and then dip into the egg. Coat in the breadcrumbs, put to one side and repeat with the second.

Heat the oil in a frying pan. Fry the escalopes for 2 minutes on each side until golden and then put in the oven for 5 minutes.

Whilst the turkey is cooking place the butter in a pan. As it melts add the lemon juice and parsley and mix well.

Place the turkey on your plates and then pour the butter over the top. Serve with mash and veg and then enjoy!
