Heat the oil in a large ovenproof dish. Add the bacon and the sausages and fry for 10 minutes, turning the sausages occasionally. When the sausages are cooked transfer them to a plate.

Add the onions, garlic and carrot to the bacon and cook for 3-4 minutes until the onions are soft.

Return the sausages to the pan and then add the rosemary, lentils, stock, vinegar and tomatoes.

Bring to the boil and then simmer rapidly for 5 minutes. Reduce the heat to low and then cover it and simmer for 45 minutes, stirring every now and then.

When the lentils are soft serve with the parsley on top, some bread on the side and enjoy!
